Paola Freire estudió derecho en ICADE y ejerció de abogada procesalista. Se pasaba la vida entre juzgados, aunque lo que realmente le gustaba era trastear en la cocina durante las pausas para comer. En 2018, una de sus hermanas la animó a crear una cuenta de Instagram (@Foodtropia) donde colgar sus recetas. Al cabo de poco tiempo, se fue a vivir a Londres; un parón profesional de seis meses en los que aprovechó para realizar varios cursos de cocina y dedicar tiempo a su perfil en redes. Regresó a Madrid, pero no a la abogacía; en vez de seguir con su profesión, decidió inscribirse en la escuela Le Cordon Bleu y sacarse el Gran Diplome de cocina francesa y pastelería. Actualmente, además de cocinar, imparte talleres online y ha colaborado con algunas marcas de menaje, electrodomésticos y alimentación.
