Posteriormente se ha dedicado tanto a la nutrición clínica como a la enseñanza. Se ha certificado en Envejecimiento Saludable y basa su práctica nutricional en los principios de la Medicina de Estilo de Vida sobre los que escribió en su primer libro, Tiempo extra. Es parte del equipo de Genovive LATAM y hace uso de exámenes genéticos para crear planes de salud. Actualmente imparte las asignaturas de Nutrigenómica y Farmacología Nutricional en el Tec de Monterrey y la Universidad del Espíritu Santo en Ecuador.
